An unexpectedly irresistible mix of real lemon and gooey cheese is a perfect combination for this time of year. Our simple recipe for Cheesy Lemon Spinach Gnocchi can be ready in as little as 15 minutes and taste like an expert chef has been hard at work preparing the meal all afternoon.

The Secrets of Gnocchi

It might be a little strange to suggest a pasta dish for a gluten-free table, but gnocchi is not actually a pasta—it’s a dumpling. The word “gnocchi” means “lumps” in Italian and that’s exactly what they are: light, little lumps of airy perfection. 

Potatoes are the main ingredient in gnocchi. Typically mixed with flour, the taste of gnocchi is pretty plain. That’s why it serves as a terrific base to dress up with a tangy marinara, or it can be tossed in a pesto for a lighter approach.

However, just like our name implies, we like to take a slightly different approach with our gnocchi. Instead of potatoes, we rely on a cauliflower base and only four total ingredients for our Cauliflower Gnocchi. Apart from a little olive oil and salt, the only thing we add to the cauliflower before shaping is cassava flour.

Cassava Flour is a Gluten-Free Superstar

Cassava flour is made from the flesh of the cassava (or yuca root). It’s flavor profile compliments cauliflower, but that’s just the beginning of the benefits from this wheat flour substitute. Serves 1-2

Ingredients: 

  • 1 package Dare To Be Different Cauliflower Gnocchi 
  • 1 tablespoon butter
  • 1 cup fresh spinach 
  • ½ cup shredded mozzarella cheese
  • Zest of 1 lemon
Directions:
  1. Prepare the gnocchi according to package directions.
  2. Once gnocchi is boiled & drained, place into a pan with butter & mozzarella cheese. Cook on low heat until melted. 
  3. Then, mix in the spinach and lemon zest. Cook until spinach wilts. Enjoy!
