Zaatar Olive Cheese Cauliflower Pizza

Take your Gluten-Free Kosher Pizza on a Mediterranean vacation!

If you’re looking for a way to spice up pizza night, this simple recipe will have your family smiling in less than 30 minutes. Zaatar and olives might seem off-putting to picky eaters, but this vegetarian and gluten-friendly recipe is a crowd pleaser. The key is opting for less ingredients and letting a few strong flavors speak for themselves. You can use any time of additional cheese you’d like; mozzarella is always a good choice because of its high water content and unique elasticity. If you really want to kick up the Greek aspects of this pizza, you can opt for a topping of feta or goat cheese. Follow along and learn how to transform your kitchen into a bistro on the Mediterranean coast.

From A to Low Carb Zaatar

The real star of this dish, apart from the low-carb and naturally gluten-free cauliflower crust, is a tasty helping of Mediterranean spice. Zaatar is tangy, woodsy, a little herbal and a lot delicious. Not every household keeps this Middle Eastern favorite in their spice rack, but it’s worth having some on hand at all times!

Food researchers have found evidence zaatar was used all the way back in Ancient Egypt. Luckily for us, it is available at your local grocery and online. If you’re feeling really spicy (get it?) you can mix up your own—with a base of thyme, oregano and marjoram it’s easier than you think.

The best part about zaatar: a little goes a long way. You’ll be amazed at the flavor zaatar brings out in every dish, from cauliflower pizza to chicken to hummus and more. Swapping out regular seasoning for a dash of zaatar is a simple way to lower your sodium intake.

All Aboard for Kosher Olives

Olives are high in Vitamin E, antioxidants and other healthy fats. A cornerstone of a healthy Mediterranean diet, olives are also low-calorie. This makes them a great partner for our low-carb cauliflower margherita pizza.

Another benefit of olives is their ability to help with appetite control. Those healthy fats we just talked about? They slow down the digestion process and send messages of fullness and satisfaction to the brain. Not only do they make your brain happy, olives have probiotic properties and aid your gut health. Talk about a win-win!
